A member of the Collège Culinaire de France since 2017, Yannick Colombié has always lived in the middle of the fields, in contact with nature. That’s where he learned his trade, observing and practising with his family. He uses no chemicals, and works by boosting the roots of the trees, enabling better exchanges with the soil, thanks to nutrients used in organic farming. He deliberately produces very little to ensure that his fruit is of the highest quality. He is adapting his methods in line with climate change.

‘My story began when, as a child, I accompanied my grandmother Eva to the markets to offer our ripe fruit for sale to the cooperative in my region of Tarn-et-Garonne. I owe my upbringing, based on respect for the earth and for fruit, to her and my grandparents. It was they who instilled in me a passion for my job as an arboriculturist, a job that is subject to the vagaries of nature, which can be very capricious in the Lizac valley where we have been established for three generations.

In 2008, I took over the reins of the nine-hectare farm, and through hard work and sacrifice, I try to guarantee the best quality for my customers, respecting the ripeness of the fruit, which has become something of a trademark for me.
I produce seasonal fruit such as apples, cereals, nectavines, apricots and, for some time now, Lovita® plums, a delight for the taste buds. As the days go by, I pay a great deal of attention to the flavour and texture of the fruit, and I now supply many chefs who ask me to do so. And I still go to the markets, as I did in the old days.
